I want to back up the server and take the email files only

Well, what's your current setup like? Do you have an existing media server? Is Exchange installed on that media server, or is it located on another server?
You would need:
1. Media server licensed with the Exchange agent licensed
2. RAWS agent installed on the Exchange server (if it is a remote server)
3. Job configured.

Your backup configuration depends on your company's recovery requirements.
Speak to your Exchange Admin to discuss what level of recovery is required - they normally want full database recoverability as well as single email message (GRT).
You cannot recover email database or message-level with only file-level backup.Exchange backup configuration is covered in BE Admin Guide.
