I just went through this same thing and wanted to post some quick comments about my experience. My concerns were more Windows related and not BE. I have a HP Proliant DL380 G7 that was using HP network teaming. I went from Windows Server 2008 R2 to 2012 R2.
-The steps I took to experience no issues was to first upgrade all HP drivers.
-I uninstalled Exchange 2010 Management Tools which doesn't run on 2012 R2 and also is no longer needed for backup purposes according to Symantec. I haven't had any problems and GRT restores still work.
-I disabled my antivirus just to be on the safe side.
-I did what CraigV mentioned. I stopped all BE and SQL services and made a manual copy of the Data and Catalogs folders. I didn't need them but if something does go wrong you can reinstall BE and then just replace these folders and be back in business.
-I disjoined the HP NIC team and ran it on a single nic and then uninstalled the HP Network utility and then did the upgrade. After the upgrade I teamed it again using Microsoft's teaming tool.
-I then upgraded any remaining HP drivers now that it is on 2012 R2.
-I ran Microsoft updates and this actually took the longest since it was esentially a new build with no patches. This required a few reboots. Once complete I checked BE and everything was working. I did test backups/restores to both disk and tape and had no issues. Hope that helps.
