Does anyone know if EV can journal Chatter content? Thanks.
Chatter does have an API available that you can leverage to get this info. Here is the link to their forum:

So if the customer is savy they could possible do themselves or as Wayne mentioned, use a partner to develope the connector for you.

If you can get it into a mailbox yes, I do not see why not. There is no plugin that I know of if thats what you asking.
Not sure you can get this content into a mailbox. It's a social networking type technology for a single domain.
Well, afaik there is nothing to do this. If this is something you HAVE to have for legal & complince I am sure GlassHouse would be willing ot help you develop something.
If you can log the conversations to a file that rollover daily you can then archive the file and in doing so archive the content and make it searchable
