Can I tell a backup 2010 job what Nic to use on the backup server?

Yes, Select the NIC in the JOB properties

tools - option - n/w and security and select interface there to select your LAN

This seems to be global, can I select this for a single job only?

You can also select it per job basis.

I don't get these options per job, all it shows is what encryption I should use.

No.  You do get to choose the NIC.  See below

 

If your job is a duplicate job, then you cannot choose the NIC because it is not applicable.

Strange I'm just editing a normal job and dont get those extra options

I think this needs to be feature enhancement. I'm using dedupe and boy would it be nice to put each server on it's own nic. I also do dedupe and tape at the same time and boy it would be nice to have server going directly to one nic etc.

I think your server is a managed media server.  You would need to check the last option on this page "Allow managed media server to use any network interface to access remote agents"

I just changed that option and fired up a 2nd job and it does use that 2nd nic.

Just selected that option on an existing job and don't get the option of what nic to use.
