Full and Differentials on different B2D devices

Hi All - We're currently running Backup Exec 2010.   We do a full backup on Friday nights and differentials Monday through Thursday - all to the same B2D device (different B2D folders for each job on the EHD).   I also have a separate full backup that runs on Saturday nights to a second EHD that I bring offsite.   I have two issues currently.   One is that the main backup drive is no longer big enough to hold both the full backup and all four differentials so I need to do something about that.   The second issue is that I'd like to find a better solution for our offsite backup.   I'd like to be able to rotate two drives for the offsite bacup so I always have one that's out of the office.   Two questions:

1.   Can I move the differentials to a different external hard drive while leaving the full backup on the existing drive?   The over abundance of data is temporary so I only need this to work for a few weeks.   Is it as simple as creating new B2D folders on the second EHD and pointing the differentials to it?   Sorry for so simple a question but I don't normally deal with Backup Exec beyond checking the jobs and doing simple file restores.

2.   Can anyone point me to a good article on rotating backup-to-disk devices for our offsite backup?

Have you upgraded to 2010 R3? 

BE 2010 R3 have a lot of improvements that have added enhancements this process.

It shouldnt be a problem running the fulls to one b2d and the differentials to a different one.
