I would like to find some documentation on how to use Backup Exec 2010.

You should start with the Admin Guide, it's very comprehensive.

Within BackupExec 2010, there are a number of video's to watch. This is why the install image is over 1GB in size!

Then there are "best practice," articles for each respective function within BackupExec that you can find on the support site.

Within the support site, it's very easy to find all of this, or even within BackupExec itself on the home screen.

The BE Admin Guide is found in the BE installation directory, usually c:\program files\symantec\backup exec.
