How would I go about protecting OVM's in Backup Exec as there isn't a specific agent that can be deployed on the VMs like with Hyper-V and VMware.

You are correct - there is no BE agent for OVM.
You need to install BE Agent on each VM (provided the OS and/or App is supported by BE) and backup the same as physical servers.
