I run a restore job of sharepoint server found the job status is keeping staging. Then I cancelled the job. But cansee it has processed 11 GB. Please refer to attachment. Has the job started to write data in destination site?

If you do a GRT-based backup to tape and want to restore a single item, it has to stage to disk. by default this is C:\Temp. Either way it will stage to disk and you need to have as much free disk space as SharePoint is big.
The only way around this is to backup to disk first, and then duplicate to tape. Restoring from disk doesn't require the staging process to happen. You will have to let this run. Make sure C:\ has enough free disk space to take the entire SharePoint backup temporarily.
