There are some good FREE downloads on how to use Storage Foundation in publications known as Yellow Books (www.symantec.com/yellowbooks). The book named "Using Local Copy Services" goes into great detail (195 pages) on how snapshots work and when to use them. I highly recommend it to all my students here in the US. If you use VCS and GCO you can run the FireDrill to test the remote application on the fly and it uses Space Optimized Snapshots. There are two others that are on Storage also.
There is also, for the Windows users, a 290 page doc on Exchange. There are other docs on IT compliance.
I strongly recommend that you take a look at these.
