I need some good templates/documnets which covers Evclient deployment plan & cheklist along with regular issues/resoulation guide which user facing in production after enabling the mailbox.

You Can refer the Release Notes. Which has the PreviousUpdates , ReadMeFirst, Updates. Which describe the issue with presvious version and which is fixed in current version or not.

If you are looking for EV client deployment to the users, you can accomplish this task through AD GPOs:

Of course, you should deploy the Enterprise Vault client per OU or department. Also, if you are planning to implement Vault Cache/Virtual Vault (VC/VV), you might need to design a plan, since if you enable VC/VV to all users at once, you will overload the Enterprise Vault server.
