Is it possible to configure EV to archive items only in a specific mailbox folder? What we have in mind is that every user would have a folder for items with retention value and only that folder would targeted by EV.

You can use EVPM to specify the MailboxRoot as DoNotArchive and then create a filter for the folder you do wish to archive and give it rules such as archive items after 30 days etc and give it a retention category etc If the folder doesn exist in outlook, EVPM will create it for you This should be all detailed in the utilities documentation
