I'm using a new install of Enterprise Vault 10 and would like to omit Outlook contacts from being archived. Is there a way to do this? I'm having a little trouble finding the solution.

Well, a contact has a message class IPM.CONTACT. If that isn't selected in your Archiving Policy then those won't be archived by the archiving task.
Evil end-users still can manually archive them if you allow them the 'store in vault' button. To stop them doing that you need to implement a registry key, it's called ManualArchiveMessageClassCheck:
