If windows can read from it (which they can, most of the issues stem around from booting from a disk that uses GPT) then EV should be able to archive from it.
But to be honest, if it's urgent, contact your sales people who should be able to give you the answers you need, and also try testing it and see what happens, that will be your definitive answer

All versions of Windows 2003 since Server Pack 1 can use GPT partitioned disks for data. Booting is only supported for Itanium-based systems.
