What version of Enterprise Vault?
And is it EVERYTHING thats moving to the new forrest? or is it just the file servers? or is it just the EV Servers?

Is your Site Alias an FQDN?
For instance is your site alias evServer.oldDomain.com?

You may want to look at this document
file:///C:/Users/aa3864/Downloads/EV%20Whitepaper%20-%20FSA%20Server%20Consolidation%20(March%202013).pdf

Essentially though, each placeholder basically has a URL in an alternative stream that points to your EV Server, and if thats an FQDN then it will be looking at the old domain, meaning you have to set up some fake DNS records

There is also this guide for EV in general though its not indepth at all and probably won't answer many questions:

You can Dtrace the EvPlaceholderService on the file server and recall a file.  Then look for the following line in the Dtrace log file calling download.asp:

Attempting to download data chunk for request - 1 at Url: http://evserver2.test.lab/EnterpriseVault/download.asp?...
