Migrating EV to new server due to lease expiration

We are planning on migrating EV to another server due to a lease replacement.  We have done this several times in the past using the Data-Only Recovery method and keeping the same name and this has worked very smoothly for us.  However this time we plan on doing it slightly differently and wanted to make sure there wouldn't be any issues with this.

We are currently at Windows Server 2003 STD x32 SP2.  We are at EV 8.0 SP4 and the two servers we are replacing one does Journaling only and the other Archving only, with both EVME.  Our indexes our SAN Disk.

We would like the new servers to be Windows Server 2008 x64 R2, which per the compatibility guide is supported.  I wanted to make sure that we can still do the data-only recovery to the new servers with the different OS and not have any issues.  It doesn't appear to be a problem, but I wanted to see if anyone out there had tried this or had any gotchas they can share.

yup just went through the same process across about 20 of our servers that were lease rolled
only issue we had was we put outlook 2007 on and it failed epically to the point where we had to remove it off of all of them and put Outlook 2003 back on
