Hello Core2,
That would be a long list :)
Your best source is this forum, and the KB (http://www.symantec.com/business/support/index?page=content&key=50996&channel=TECHNICAL_SOLUTION)
It should be Enterprise Vault 8.0SP5 most likely. I assume your new company also made you an Enterprise Vault admin. My advice would be to leave EV alone, if it is running without issues. If so, talk with your management to get on a course. This probably will be a course for EV10, perhaps even EV11. You thus also need to discuss upgrading Enterprise Vault. I don't know where you are located ofcourse, but if possible, get assistance from a partner to aid in the (first) upgrade to EV9. You need to do every upgrade (i.e from 8 to 9, from 9 to 10, from 10 to 11) to stay in sync.
This also depends on other plans. Will you be using Exchange 2013, a new SQL version, new OS? Each EV-version has new compatibility guides released, which show what is supported, and what not.
Good luck. I remember from my initial meeting with EV, I thought "how am I ever going to understand this". took me a few years of exclusively working with EV :)
Regards.

We have recently released the "Enterprise Vault Administrators Cookbook" which you can download from http://www.symantec.com/docs/DOC8105
This is by no means a substitute for training but may be able to explain common tools and tasks while you look for a training course.
Add another vote for engaging a partner or Symantec consulting to get you upgraded. Your current version of EV is not going to work with the more modern versions of Exchange, plus as others have noted, you can't get help from Symantec technical support. Your hardware may or may not meet the minimums for the more modern releases of EV so your upgrade project may become complex. We have great on-staff consultants and fantastic partners to help you.

i'd share the same advice with you as i would with anyone still on EV 8 today. strongly consider consulting with a Symantec partner about professional services to upgrade your environment.
