Recommendations or best practices for upgrade from EV2007 to EV8

OK,

I've seen the upgrade instructions and read the readmefirst docs, and the installation and configuration guides, but none of them address the fundamental issue of upgrading EV2007 to EV8, which is that after the upgarde you are left with an unsupported 32bit platform (Assuming you have a supported 32bit Windows EV to start with).
So does a recommended procedure exist for transitioning the EV service to use 64bit (in WOW mode) Windows. Do we rebuild the server OS (assuming that the hardware is 64bit) or move the archives and tasks to a new platform?

Well to be fair, the server installation and configuration is the responsibility of the end user, so the documentation will cover installation and upgrading on a pre-existing server.
However it will not (and in my opinion it should not) go in to any details regarding how to upgrade the OS from one version to another

in terms of support or Professional services, they would class this as a DR excersise, normally you would push across to a different server that has the correct OS requirements, or if you can spare the down time, just do it all in place on that machine.

Whether you can do a straight upgrade from Windows 2003 x86 to x64 is another story, i don't believe Microsoft officially support upgrading to x64 from x86 and you will have to do a full rebuild

EV is supported.
I have 4 journal servers EV80SP2 running on windows2008SP1 64bit. works fine.
Newly installed, so no move.

EV will get 64 bit eventually...

I was hoping someone would answer the fundamental question that none of the docs I've seen so far address, which is;

Once the upgrade from EV2007 to EV2008 has been carried out, how is the server (which if it was installed in compliance with the compatibilty charts would be 32bit OS) or service made compliant with the EV8 compatibilty charts which only support Windows Server 2008 x64 (WOW mode)?

Having had to rebuild a new EV 8 production server because it was initially wrongly installed as 32bit to maintain support, I know how much of a chore this is. I was wondering if there was any definitive guide which says once you have upgraded now rebuild your server to 64bit OS like so....
