email archiving from user mailboxes can be done based on age, quota, or a combination of the two. you can also perform journaling and then classify what you archive based on other attributes but that requires a different module called DCS which integrates with EV.
for FSA you have tons of options for archiving based on many different file attributes and combinations of them.
