I'm looking at evaluating Universal Shares. What version of NFS is in use and what are the authentication options for clients? At a high level the CIFS option seems more secure but most of the systems I'm considering as use cases are really stripped down Linux versions with just NFSv3/v4 clients.

So seems like NFSv4 comes with NetBackup appliance 4.0 as per here.

Best bet would be to review the following guide on Universal shares.
https://www.veritas.com/content/support/en_US/doc/NB_83_BYO_UShare_Config
or refer to the appliance admin guide if you are using an appliance.
I'm not sure what NFS versions are supported - for the appliance I think it is limited to v3, but for BYO it may be possible to also use v4.
