Hi,
1. I would like to know how to configure nbu appliance catalog backup.
specify path for keep catalog?
2. and incase of catalog backup between site? HQ > master server is windows and branch master server is nbu appliance.
how to configuration? (if not use AIR)

What type of Storage Units do you have available?
I agree with Riaan - if you have tape, this is easiest.
My next choice would be Basic Disk - this can even be a network share.
Advanced Disk and MSDP can be used but additional steps to config these devices are needed in case of a disaster.
The DR-file should preferably be written to a network share.
You can also used the Advanced Disk partition or root filesystem on the Appliance (when you add this you will receive a warning but it will work).
On the Windows master you can specify a path on the master server that is on different volume/drive letter to NBU catalogs.
Important to configure email for the catalog backup as this will email you the DR-file and recovery steps.
I don't see any point in configuring catalog backup between sites.
Unless you are using the other site as media server for the catalog backup.
If catalogs are big it will mean lots of network traffic between sites.

I prefer two copies ,,, on disk with shorter retention and on media with a bit longer
DR files are always on network share
