You did not say which NBU version you running but assuming it's 7.6 then you can:

- Configure VMware off-host backup over SAN to the appliance

- Configure Application State Capture, single pass backup, v-ray or whatever marketing name is currently in use - basically to back up your Exchange during VMware backup over SAN, you'll need Symantec VSS driver installed for that

- Configure NetBackup Accelerator for VMware, you'll need to turn on Changed Block Tracking for Exchange VMs

And enjoy.

You did not tell us NBU version or how backup is done - MS-Exchange or VMware policy?
Single or multiple Information Stores?
Standalone or DAG?

Have you checked resources on Exch server?
How do virtual resources and disk access map to physical resources?

PS:
I have moved this post to NetBackup forum as this is not really related to NBU Appliances.
