Ok. I think I've successfully backed up the Information Store using GRT. But now I get a "database system error" when attempting to view an individual mailbox. See attached screen shot. Any ideas?

The progress made was that I can now see the individual mailboxes. All I did was create a share on the directory that the backup goes to on the UNIX master/media server.
I'm restoring to the original location and overwriting existing messages.
Yes, Client Service account has full Exchange Admin rights.

If I may ask - why are you trying to expand a 'Logs' folder?
Log folder does not look to me like an individual mailbox?
Have you tried to expand a user mailbox?
Have you gone through the 'About restoring individual Exchange mailbox and public folder items' section in the manual?

I received the error after clicking on a user mailbox. Yes, I've gone through that section but until I can expand an actual mailbox, it doesn't really help me.
Could there be a connection issue between the master and the client? Could it be an NFS issue?

I will do a search to see if I can find anything...
Screenshot looks like you were selecting 'Logs_" folder.
Just one small thing - is this perhaps a W2008 server?
I have personally experienced 'weird' errors because of UAC.
Certain NBU tasks would would 100% and others produced errors that don't make sence.
Closing the NBU Console and re-opening it with right-click, 'run as Administrator' fixed the proble.

Yes, our Exchange server is w2008 and our master/media server is HP-UX Itanium.
I'm making progress though. I can now see the individual mailboxes(after sharing the diskfrom the unix box where the Information Store was backed up to) but when I attempt to restore two emails, I get the following errors:

Looks like our Exchange admin had forgotten to create a mailbox for the netbackup account on exchange. Backups and restores now work for Exchange 2010!!! Thanks for your help.
