We are currently running netbackup 7.6 enterprise server on old hardware. We are getting new hardware and looking for best practices for the drive configuration, Raid 5, Raid 10, read/write settings, byte size, etc.

There is no specific requirement for the raids..
you can always go with the Raid10 or Raid 5 if you want to have the disk level protection.
and comming to drive speed.. its always better to have the good read and write speed preferably tirer1  for the FS that is hosting the Master DB.

please read the below doc to choose the master server

Drive configuration for .. ??

The drive where NBU is installed?
Drive where NBU catalogs will be stored?
Disk storage units? (Advanced/basic?)
Dedupe Storage?

The drive confige where NBU is installed as well as database and catalogs.

We normally split them onto either RAID 1 or RAID 10, but just wanted to confirm.
