Working for a Client that requires the support for the following:
Have the ability to do Bare Metal restores of VMs and Physical machines
Have the ability to backup Operating Systems from Windows 2000 Server to Windows Server 2012
Have the ability to do “Brick Level” backups of Exchange and SharePoint
Current Backup solution runs on – NetBackup version 7.7.2. Latest release is known to be NetBackup 8.1.1.
Does the current version of Netbackup (v.7.7.2) support these requirements or is an upgrade recommended?

Right off the bat, you aren't going to get support for Windows 2000, it was end of life almost a decade ago and Veritas has long since stopped supporting such an old OS.
You need to provide versions of the applications you are asking about.

Bare Metal Restore (BMR) for virtual environments is covered in this doc:

Bare Metal Restore (BMR) for physical environments is covered in the Software Compatibility List (SCL) for each relevant version (see 1st URL above)
As can be seen in the same SCLs, support for Windows 2000 up to Windows 2013 is not possible.
The reason for that is because Microsoft dropped support for these versions.
A 3rd-party vendor cannot be expected to develop new software for unsupported OS versions.
Veritas always works with OS vendors when new versions are developed and tested.
Exchange and SharePoint support is covered in Application/Database Agent Compatibility List.
Veritas calls 'brick-level' GRT.
