Hi,
Is there explanation what is transported over ip network during vmware policy backup, where transport mode is SAN.
On attached picture, KB/s column.

What you've highlighted is the KB/Second column. this is a calculation of the performance, Kbytes written vs time. It has nothing to do with SAN vs LAN.
Please clarify your question.

From my basic understanding:
Snapshot of the VM will go over the SAN
Any metadata about the backup will be sent over LAN(IP).

I think a better (but maybe not complete) explanation is that command and control is via LAN (command to initiate snapshot of VM, repsonse indicating datastore where VM resides etc.)
All data flow is via SAN (the backup host reads the datastore and saves to the target STU). Metadata collection (for granular recovery is performed by the backup host (I think).
Now if the backup host is NOT the media server, then the data from the backup host to the media server will undoubtably go via LAN (but this is an unusual case).
