You can not impose such restrictions by storage unit settings.
All data flow is controlled by policy, so as wrote above, just configure policies so that it us used by only one client.

When you create this storage unit as per above excellent advice, you also need to ensure that drive(s) are not shared with other media server(s). Otherwise there is no guarantee that STU will always be available.
Another option is to install media server software on the client, connect dedicated tape drive and/or disk, create STU.
This STU will be dedicated to this media server/client alone.
We call this 'SAN media server' and needs Enterprise Client license.

Create storage. Ensure the strorage unit is set to "on demand".
From the policy where the client is located - point to the "on demand" storage unit.
Ensure other policies does not point specific to the "on demand" storage unit"
