Just Googling the words as they stand:
Process: A series of actions or steps taken to achieve an end.
Service: A system supplying a public need such as transport, communications, or utilities
Daemon: A background process that handles requests for services such as print spooling and is dormant when not required.
The 'problem' here is that essentially the latter two could also be (are) deemed as 'processes' in their own right.
Essentially, from an NBU standpoint & what I imagine you are intimating, I would say that the Services/Daemons are those processes required to enable NBU to perform as a backup application, whereas any other process would be those that are subsequently started during, and solely for, an actual backup (e.g. bpbkar etc) or any other activity and as a process would then finish once the objective (e.g. backup) was achieved.

As basic as i can make it ...
Services - generally refer to Windows and have a full name such as "NetBackup Device Manager"
Processes - generally the actual executable process that runs when the servcie starts - in the above case ltid.exe
Daemons - generally refers to Unix and refers, as it were, to the Processes that run - such as ltid - usually the same as in Windows but without the .exe
