Topic says it all. Can SSR do snapshots of Windows 2000 systems for the purposes of bare metal restores? If so which version(s)?

Refer the following note
Windows 2000 Server/Advanced Server, and Windows Small Business Server 2000 are not supported in Symantec System Recovery 2011. You can still use Backup Exec System Recovery 8.5 on these versions of Windows 2000. You can also perform backup and restore functions remotely on Windows 2000 computers using Symantec System Recovery 2011 or Symantec System Recovery 2011 Management Solution.

BESR 8.5 was the last version of System Recovery that had support for Windows 2000.
Limited support for 8.5 has already ended (http://www.symantec.com/business/support/index?page=releasedetails&key=53845#).
You may be able to use newer versions of SSR to do cold backups (with the OS shutdown) but Symantec would not be able to provide any support for that.
