How to restore file permissions

I am trying to migrate a Windows 2003 server to a Windows 2008 R2 server. I can backup all the files that I want to migrate, but when I do a restore it does not apply the file security settings from the old server. It only applies the inherited rights that are on the new server. Is there something I am doing wrong here? I would hate to have to go through 600GB od data are reapply rights to all the files and folders.

Thanks for the reply, but I don't see that option anywhere. I am trying with both the "Symantec Recovery Point Browser" and the "Granular Restore Option" and I cannot locate the General Settings Options. Am I looking in the wrong place?
