This may be a dumb question but I had a version of Symantec 2011 SSR installed and let the trial period expire.
Since then I've purchased a valid key but even after uninstalling and reinstalling the product I still cannot enter the license key.
I know it's a good key because i've installed it on a fresh OS and it works.
Any clues?

Yep:
Try to stop the SSR and the Symantec Management Agent service, then delete the following registry keys and afterwards restart the 2 services:
[HKEY_LOCAL_MACHINE\SOFTWARE\Symantec\Symantec System Recovery\10.0]
"O"
"AK"
"LO"
"MLO"

removing all registry remnants of SSR might help as well
