Restoring the individual folders from the public store is possible, if you enabled the Granular Restore (GRT) option for the Exchange backups or if you did a Legacy backup of the public folders.
If you used GRT for the backup and it went to tape, you will need to duplicate the public folder restore sets to tape. Then you will be able to restore items from the public store. If the backup was to disk, you should already be able to see those.
If a legacy backup was done you should be able to just restore the items right either backup.
If you didn't use either method, you could dismount your current store and save it off some where as a dirty backup, then restore the entire public store. Once restored export the items you need to a PST file or another mailbox. Bring back in your original store and merge the data back into the public store.
