I have a server with a single AIT2 drive. Can I safely add a 2nd AIT drive and run 2 backups in parallel?

if these are stand-alone drives, absolutely!
If your drive is in a Library and you want to add the second drive to the Library also, then you would need one LEO serial (Libray Expansion Option)
