Do you use Stores Backups only or do you do Mailbox backups as well

Was the original mailbox also on E2K3?

Depending on what your deleted mailbox retention is, you might be able to use the Exchange System Manager tool "Mailbox recovery tool" found under the "Tools" folder in the Exchange ESM.
