Use a combination of these KBs-

http://www.symantec.com/business/support/index?page=content&id=TECH129826

http://www.symantec.com/business/support/index?page=content&id=TECH67768

Would recommend to upgrade from 12.5 to 2012 on the same server and then move to another server.

Would not recommend migration first as BE 12.5 is not compatible with Win 2008 R2 as media server.

And yes, this process will retain your existing jobs. Do have a look at the following KB as BE 2012 is considerably different from its previous versions. If possible, I would recommend you to upgrade to the newly released BE 2014 instead of BE 2012.

You might want to read my article below before you upgrade to BE 2012

https://www-secure.symantec.com/connect/articles/preparing-install-or-upgrade-be-2012

BE 2012 is server-centric. If you upgrade to BE 2012, your jobs would be split up if your jobs back up more than 1 server per job.  If you want to retain multiple servers per job, then you should upgrade to BE 2014 rather than BE 2012

BE 12.5 is compatible with 2008, but not with 2008 R2.

In your original query, you have mentioned "OS - 2008 R2"
