Since the machines are no longer on the network they won't show up in the graphical selections list for you to remove them.
If you go into your selection list and switch to the Text view you should then see the two machines listed as one or more line entries, from where you can remove them from your backup selection.
Unlike the graphical view the text view gives you an accurate list of what Backup Exec is actually trying to backup.
