Restore Exchange Information Store to Different Server

I have a tape for a client which was backed up by Backup Exec. There are individual mailboxes and public folders on the tape as well as an information store backup. I can redirect the restore of individual mailboxes to an existing mailbox one at a time successfully, but what I'd really like to do is to get the EDB files completely so that I can use an offline EDB reader to recover several complete mail folders.
The server I'm restoring to has a new version of exchange installed but is not the same server name or exchange organization of the original backup. I don't need to be able to mount the info store afterwards - i only need the raw edb files.
