Thanks TRaj, I think that answers my question. That link does say "DESKTOP Version License will install only on Windows Desktop Operating Systems", so presumably the license will be rejected even though the software itself is installed on Server as...

In Windows 2000 and above there is a "recovery" tab in the the properties of a service. You can set a service to restart if it stops there. This worked around my problem.
