we do a CIFS-level backup like it's descrribed here:

But it seems, that it's not possible to do do a differential backup for CIFS-defined paths.
All files in the CIFS-folders will always be in the differential backup, no matter if they have beend changed or not.
Is that not possible or are we doing something wrong?

Just confirming CraigVs answer - Differential and incremental backups are only supported where a remote agent (RAWS or RALUS) is available or where other capabilities are present (VMware Incrementals, NDMP Option backup levels etc)
They are not supported over share level access and there are other limitations on share level backups as well(Access Control Lists etc)

This doesn't look like it is possible doing a CIFS backup using Differentials.
