If I have a BE210 server, running on Windows 2008 R2 Server, performng my corporate backups.
Can I use BE2012R2's Remote Management client from a Window 7 64-bit workstation, in order to remotely connect and manage the BE2010 server? Or would I have to update the 2010 server to 2012?

No. You cannot. The BE 2012 console is quite different from that of the BE 2010, e.g, BE 2012 does not have policies.
If you are reluctant to upgrade your BE 2010 to BE 2012, why don't you install the BE 2010 remote console and control your existing BE 2010.

Hi Quantum-IT,
PKH is correct. You cannot use BE2012 Remote Console to manage a BE2010.
As per PKH, BE2012 console is quite different from BE2010. For your reference, below is the link that documented the Difference between BE2010 and BE2012.

Just install and use BE2010 Remote Admin console to your Windows 7 desktop to manage your current BE2010 Server.
