Create a policy which containts the Full job and Incremental jobs. You can assign the schedules as you note within each job inside the Policy.
Have a selection list created first for what you want to backup. When you finish creating the policy and hit ok it will ask which selection list you want to use. Once you assign it a selection list, BE will then create the jobs accordingly.
TIP: Make sure you change the Time window on either the Full or Incremental so the Full job runs first. Easiest way to do so is just bump the time window of the full job to start time to no earlier than 1:00am and end time no later than 12:59am. This will force the Full to run first.
