Restore deleted items in mailbox

A user has just presented to me that she accidentally deleted a few emails in her deleted box that she really didn't want to delete. I am unfamiliar with how to restore a mailbox let alone to a specific area in a mailbox. Would anyone be able to help guide me through this process?

How long ago were the files deleted?
What is deleted item retention on your Exchange Server?
What version of Exchange are you running?

The files were deleted about two weeks ago she says. I checked the Exchange 2000 server for deleted item retention - set for two weeks. There are no files to retrieve for this user.
