I know that in the vault store usage report you can view the total items and size of an archive... But is there a report out there that could show how much an an archive has grown or how much mail has been captured within a certain time-frame?

If you go into the Specialized Reports for Config, You can run multiple reports for time frame. Number of items per archive in the past X Days, total number of items in the past xx, Amount of data from xx to xx etc...You can select which store database to run it against.  These are the simple basic ones with VAC.

no, it'd have to be manual sql queries, i think its even in the admin guide under useful sql queries
