I would like to understand the minimum system requirements for the Enterprise Vault. because on the website it says that you need 8 CPU, it is not an exaggeration too many?
If you look in the EV Install and Config guide you will see 8 CPU is recommended but 4 CPU is the minimium. Also, 16 GB is recommended and 8 GB is the minimum.
For sure you can get away with a lot more, but it all depends on your user population, amount of data to archive, features you want to install, etc, etc.

And really they mean cores, so you could have a dual Xeon 6 core, or a single AMD with 8 or 16 cores etc
I don't think the requirement is truly unreasonable these days
