use multiple stores for file archiving

Using version 7.0 sp2,  is it possible to setup each server with its own vault store? I assume it is, but I cannot find where I tell each policy to go to the different stores.

Of course.
This is set on Mailbox/Archive Level, you can direct each archive to it's separate vault store, if you want.
