The Administrators guide is a great starting point. Chapter 15 specifically addresses disaster planning and recovery. http://support.veritas.com/docs/288005 As far a specific set of processes for "best practices", there are far too many variables (SQL, Exchange, O/S versions, etc.) to produce a concise document. Again, the Admin Guide has processes documented for disaster recovery for these different scenarios.

Hope that helps.
