About once in a week I get a failed job with the status

Completed status: Failed
Final error: 0xe00002f7 - Cannot extract mailbox messages from the Exchange backup. Review the job log for more information.
Final error category: Resource Errors

I can see the data in the job is complete, but it fails with error above. The job is copied to external harddrive and the error comes about once a week on a random day

What is your exchange version and the OS version on which it is installed?

If you are using Exzchange 2003 with OS windows server 2003 sp1 you may get this issue.

Exclude C:\Temp\Backup Exec directory on exchange server from anti-virus active scan.

We have two customer using BE2010 with the same configurations. I had this error some times in the last months but recently the error occurs nearly the whole week. The full backup is running fine but the incremental backups fail (sometimes an incremental backup works but this is rare). The exchange-servers are Windows Server 2003 SP 2 and exchange 2003.

There is running symantec endpoint protection on the server - I can´t find anywhere to exclude anything files/folders - and the temp folder on the C: drive is even empty.
