Best way to backup virtual machines to tape?

We have installed BE 2012 with VMware and HyperV agent.

The customer has 3 virtual machines - Exchange, Terminal server and a Print Server.

We need to have GRT over the Exchange VM machine, so we can restore an individual mailbox etc, whats the best way to do this?

Currently there is a single job setup to backup the Hyper-V machines.

I have read this, however it doesnt explain wether each server should be backed up individually. Or wether the server the machines are hosted on is the only one that needs to be backed up, as they Hyper V machines are in the selection list. Or is this just the machine images?
