Ok, I have a trial version of Backup Exec 12 and backed up Exchange 2003 using the GRT, but now I'm practicing with retoring a single mailbox.
Are there step by step directions somewhere? I don't see how this works..... sorry for being a little dense 
As I know you should use Recovery Storage Group (use Exchange Management Console). After you recover a store to RSG, you will be able to recover single mailbox -
