Restoring Individual Mail Messages

I've been given the task of backing up our Exchange server and believe I've gotten it to backup all the data correctly. My question is with respect to restoring email.

If Person X needs a single email restored that was accidentally deleted do I simply have to navigate to Person X's mailbox, find/select the email message and then click Restore?

Yes please backup the mailboxes and you can restore single mail if there is a need to restore it.
