I have a scheduled backup at set at 8P.M. when no one is sure to be on the network. A scheduled backup will not run on its own because I get a prompt asking me if I want to overwrite media. I already said yes on the schedule setup. What am I missing?

Most likely, this is related to how you have your options set up for overwriting media. Go to Tools | Options | Media Management and check near the top for either of the checkboxes 'prompt before overwriting...' being checked. Unchecking these will allow the job to run without being prompted.
